Corn and Black Bean Salad

Serves 8 to 10 as a side dish.

Ingredients

  • 2 (15 oz.) cans corn, drained and rinsed

  • 2 (15 oz.) cans black beans, drained and rinsed

  • 1 (14.5 oz.) can diced tomatoes, drained

  • 1/2 cup red onion, diced

  • 5 green onions, sliced thin

  • 1 red bell pepper, remove seeds and stem, diced

  • 1 Tbsp garlic, minced

  • 1/4 cup finely chopped cilantro

  • 1 avocado, peeled, pitted, and diced

  • 1/4 cup lime juice

  • Salt and pepper to taste

  • 1-2 Tbsp olive oil

Directions

  1. Mix together corn, beans, tomatoes, red onion, green onion, bell pepper, garlic, and cilantro in large bowl.

  2. Toss in avocado and lime juice softly to not mush avocado.

  3. Season with salt and pepper and drizzle with olive oil to serve.
